Experience "The Wild” as you travel the globe -- see 1000 larger-than life lanterns (that can tower up to 23 feet tall); explore cheetahs, lions, jumping koi fish, jellyfish, panda bears, majestic cranes ... even travel back in time with dinosaurs.
Discover dinosaur rides for kids, captivating Kung Fu performances, handcrafted souvenirs from Chinese artisans, interactive shadow puppetry with master puppeteers from China, and savor Asian and American food (along with beer, wine, and margaritas & a newly-added coffee & hot cocoa stand for winter nights)!

Each lantern is handcrafted by masters from Zigong, China (the center of the country’s lantern heritage), using a tradition that extends back centuries. The lanterns are created using steel frames surrounded by colorful rayon “skins” and illuminated from within by LED lights. Additional mosaic-like displays are formed with small glass medicine bottles filled with brightly colored liquid to create peacock and ceramic dishes, spoons, and cups to create elephants sparkling in the fall air.

Each lantern is handcrafted by masters from Zigong, China (the center of the country’s lantern heritage), using a tradition that extends back centuries. The lanterns are created using steel frames surrounded by colorful rayon “skins” and illuminated from within by LED lights. Additional mosaic-like displays are formed with small glass medicine bottles filled with brightly colored liquid to create peacock and ceramic dishes, spoons, and cups to create elephants sparkling in the fall air.

Need to know information and what to expect:
At the farm cooking school, there are no hard-to-find ingredients or strange cookware. Great cooking isn't about recipes—it's about the quality and nutrients of the ingredients and techniques. In our classes you'll work together with other students in a fun, hands-on environment led by our professional chef instructors.
Classes are 2 hours, unless otherwise noted above.
Hands-on classes are limited to 6 students
 You will be standing, cooking and working for most of the class
 Please wear comfortable, closed-toe shoes and have long hair tied back.
We will supply aprons and all cooking equipment/tools. However, if you prefer to use your own kitchen knife, you are welcome to bring it.
 You will enjoy a full sit-down meal at the end of class with your classmates 
 Please bring empty containers to take home leftovers
 Students receive a coupon good for 10% off at our spice shop on purchases the day of class.

What are my transport/parking options getting to the event?
If you are driving to the event, directions from the New York State Thruway (Interstate 87) are as follows:
Take Exit 18, New Paltz. Pass through the toll plaza to the traffic light. Turn right onto Route 299. Proceed through two traffic lights. At the second light by Lowe’s make a left, go one block to a stop sign, make a right.
We are less than a half-mile, look for white horse fence on the left. If you past the church you have gone too far.
 Bus and Train Travel
Bus service is available on Adirondack Trailways to the New Paltz. Service departs from Port Authority in NYC, Albany Trailways, Route 17 in Ridgewood, NJ and locations in southern New York and Long Island. Trailways can be reached at 800-858-8555 and online at http://www.trailwaysny.com. Bus is 80 minutes from NYC.
Train service is available via Metro North and Amtrak trains to the Poughkeepsie Train Station, approximately 15 minutes away from Highland. We just opened a number of dumpling & bubble tea classes on our schedule around Chinese New Year and this upcoming holiday season. Grab your seat before the seats are all gone. We cordially invite you, your families, and your friends to attend a fun DIY Dumpling + Bubble Tea party to celebrate Fall and a kickoff the holiday season, including Chinese New Year while enjoying bubble tea, everyone will learn a new cooking skill – making dumplings + Bubble Tea!
2019 Chinese New Year will be on February 5, 2019!
In the dumpling making party, you will enjoy a hands-on adventure - make-your-own dumplings. You'll be guided, taught by Yin, a dumping making expert who will teach you how to fill and shape your own pot stickers and more in an authentic way.
At the event, we may use either pre-made wrappers or make wrappers ourselves. We will also prepare at least two types of dumpling fillings (meat, e.g. kale and ground pork, and vegetables): each person will make at least five of each dumpling type. We can either cook one recipe at a time and pause to eat between batches, or cook them all and eat at the end. Either way, dinner will be delicious!  Dumplings are the singular best food to make for (and with) a crowd: They’re easy, fun, beginner-friendly, and cook super quickly. The more hands you we on deck, the quicker the dumplings come together and the faster we can get to eating. 
Highlight: Make your own Bubble tea! Everyone can taste at least two flavors of the trendy bubble tea! Did you know bubble tea comes from Taiwan?

About Yin
Yin operates the "Five Spice Tour of Philly's Chinatown" - cultural walking tour with dim sum tastings, and restaurant hopping tours to Philly Chinatown. As a dumpling expert, she hosts classes and competitions based on the iconic food. She has worked in City Kitchen for the dumpling making show at the Reading Terminal Market as its guest for Chinese New Year. Yin was also interviewed by “What’s Cooking” on 1060 by Hadas Kuznits, of the Philadelphia (CBS) KYW radio station about Chinese New Year. In early 2017, she was invited by the show, Travel & Adventure, to host a dumpling making show in the PA Convention Center.

In summer, 2017, Yin was invited by the Reading Terminal Market to participate in an important community project - The Breaking Bred, Breaking Barriers dinner project. Yin represented the Chinese community to present Chinese iconic food to other ethnical groups. More specifically, she performed a dumpling making demonstration and brought the most popular street food in China, the Chinese Crepe, to the Philly market for the first time ever.

The Breaking Bread, Breaking Barriers dinner project, funded by Knight Foundation, brings together individuals from different cultures to sample each other’s cuisines and learn more about each other, to see what they might have in common. The project parties include the Reading Terminal Market, HIAS-PA, Philadelphia’s Human Relations Commission and the UPENN Project for Civic Engagement.
On June 5th, Reading Terminal invited three communities – the Chinese, the Mexican, and the Mummers, to get to know one another better through this forum, by learning about each other’s culture through food. We were honored to be invited to represent the Chinese community. Each community, through a guest chef, provided an interactive cooking demonstration of one to two dishes that can be used to highlight one’s culture, history, and communal stories. They then sat down to have dinner to engage in a dialogue facilitated by the Human Relations Commission. The idea is that the participants walk away from the session with a foundational understanding of one another’s culture and history.

On September 14, 2017, Yin assisted Master Chef Joseph Poon from Chef Joseph Poon Creations and Events during 2nd Annual PAAFF (Philadelphia Asian Arts Film Festival) Asian Chef Experience highlighting the top Asian culinary talents in Philadelphia.
This was a special Chef tasting event with 14 of Philadelphia's most prominent Asian American & Pacific Islander Chefs preparing tasting sized portions of their best dishes. This event serves as an important fundraising tool for 2017 Philadelphia Asian Arts Film Festival while also highlighting the incredible talent and diversity of cuisine within the local community of culinary artists. Yin founded Five-Spice Philly and Dumpling Academy. Five-Spice Philly is an organization dedicated to the service of showcasing Philadelphia’s thriving Asian food scene. It seeks to bring Philadelphia residents and all incoming visitors the latest in Philadelphia’s cuisine and entertainment.

Right in time for the holidays: In this new Master Class series, you'll dive into the art and science behind Indian cuisine and learn how to create authentic, soulful and healthy meals (with a vegan and vegetarian focus to help you reduce your carbon footprint), using ingredients available in your local market.
These sessions will show you how to tap into health promoting properties of spices, such as turmeric which has been shown to reduce inflammation and exhibit anti-tumor activities against certain cancers, including breast cancer.

What to expect:
Upon arrival, you’ll be greeted with aprons, receive a walk through of the recipes for the class, and then get right down to it in our fully-outfitted kitchen. Expert chefs will help you master techniques such as bhuna, dum, tadka and baghaar, essential to both classical and new Indian cuisine, and hacks that are key to getting knockout flavor. Thank-you to everyone that replied to my message in regards to what day would work best for you to meet up for our 1st Meet & Greet group meeting. For those that can attend, most of you wrote to me saying that Sunday, December 23rd, would work best.I think that day/evening works pretty well. Please make sure to RSVP here on Event Brite so that I can get an idea how many people to expect when I make the reservation. FYI, I will try to have a type of "ice breaker" so that we can learn each other's names! :D Just so that you are prepared to introduce yourself, please start thinking about why you signed up for this trip? Etc. This 1st meeting will be more about learning about each other and discuss any questions/concerns you have. Half of the world is closed on Christmas Eve, plus this year it falls on a Sunday which means the likelihood of anything being open is even more remote! For many, Chinese food on Christmas Eve is a tradition, and we honor that tradition this year by reserving a huge table at one of NYC's finest authentic Chinese Restaurants in Chinatown called The Golden Unicorn.  It will be a fun night to get out of the house and socialize with others who are still in town.  Here is how it works:

The Chinese Food Lover’s Club and The Jews With Nowhere to Go on Christmas Day Club and The Adults looking for kids activities on Christmas Day Club are coming together for the second annual Communal Christmas Chinese Dinner Buffet with Kids Movie at the Clubhouse.
From 5:30 to 8:30 pm. Cost would be $29.50. for adults and $16.50 for kids includes soft drink and bottled water and a traditional Jewish Christmas meal (chinese food and pizza)
Babysitting (only kids with adults IN the building) will be provide in the media movie room for kids and we will have multible sitters adjusted to kids tickets sold.

Native, First Nations, Amerindian and Aboriginal members of the Americas once again honor the gathering tradition as the year closes and a new one begins. This is a celebration of the communal spirit that links us all and an open forum for cultural exchange.
Enjoy a week filled with music, dance and arts and crafts as well as authentic foods, alligator demonstrations and the beautiful Florida Everglades. With over 45 vendors, performers and demonstrators, this is the largest gathering of its kind in South Florida.
Featured artists include the White Mountain Apache Crown Dancers, hoop dancer Ascencio Harjo, the Wasu Kasna Dance Troupe, the Native Pride Dancers, the Redhawk Native American Arts Council dancers and more. The holiday are here and ITK Culinary is offering classes during the break for everyone to enjoy a fun day of cooking.
Japanese food is such an important part of our culinary landscape here and when posed the question of what is the meal for the Christmas Holiday, we were shocked to hear the answer.  Yuki Burns (Tokyo native and global citizen) gave us the straight forward answer of “Its not that exciting,” and sent us this YouTube video.
So we decided to honor the tradition by holding a class featuring the following:
Karaage – What Americans called Fried Chicken – Customized for the Japanese Palate with Garlic Soy Sauce Sake and Dashi Marinate.  Fried lightly till crispy and juicy inside.
Gyoza –  Has become a mainstay of Japanese cuisine, a staple that is very popular in and outside of Japan. In the United States, you can find gyoza at Japanese restaurants and Asian-themed restaurants.
Takoyaki – A wonderful street food of pickled ginger, green onions and octopus. Hokkaido Cheese Tarts – World famous and very delicious.

Camaje Cooking Classes are unique. They are intimate (there is room for only 6 students per class) and are taught in a working restaurant kitchen by a professional chef. Class starts in the Camaje dining room, where you meet your chef/teacher and your classmates to discuss the menu and how to prepare it. Then you don aprons and, under the chef’s watchful eye and with her help, if needed, you prepare your ingredients. Prep finished, it's time to move to the kitchen to cook. We will also prepare at least two types of dumpling fillings (meat, e.g. kale and ground pork, and vegetables): each person will make at least five of each dumpling type. About Yin
Yin operates the "Five Spice Tour of Philly's Chinatown" - cultural walking tour with dim sum tastings, and restaurant hopping tours to Philly Chinatown. As a dumpling expert, she hosts classes and competitions based on the iconic food. She has worked in City Kitchen for the dumpling making show at the Reading Terminal Market as its guest for Chinese New Year. Yin was also interviewed by “What’s Cooking” on 1060 by Hadas Kuznits, of the Philadelphia (CBS) KYW radio station about Chinese New Year. In early 2017, she was invited by the show, Travel & Adventure, to host a dumpling making show in the PA Convention Center.

The Breaking Bread, Breaking Barriers dinner project, funded by Knight Foundation, brings together individuals from different cultures to sample each other’s cuisines and learn more about each other, to see what they might have in common. The project parties include the Reading Terminal Market, HIAS-PA, Philadelphia’s Human Relations Commission and the UPENN Project for Civic Engagement.
On June 5th, Reading Terminal invited three communities – the Chinese, the Mexican, and the Mummers, to get to know one another better through this forum, by learning about each other’s culture through food. We were honored to be invited to represent the Chinese community. Each community, through a guest chef, provided an interactive cooking demonstration of one to two dishes that can be used to highlight one’s culture, history, and communal stories. They then sat down to have dinner to engage in a dialogue facilitated by the Human Relations Commission. The idea is that the participants walk away from the session with a foundational understanding of one another’s culture and history.

This was a special Chef tasting event with 14 of Philadelphia's most prominent Asian American & Pacific Islander Chefs preparing tasting sized portions of their best dishes. This event serves as an important fundraising tool for 2017 Philadelphia Asian Arts Film Festival while also highlighting the incredible talent and diversity of cuisine within the local community of culinary artists. In this new Master Class series, you'll dive into the art and science behind Indian cuisine and learn how to create authentic, soulful and healthy meals (including dishes with a vegan and vegetarian focus to help you reduce your carbon footprint), using ingredients available in your local market.
These sessions will show you how to tap into health promoting properties of spices, such as turmeric which has been shown to reduce inflammation and exhibit anti-tumor activities against certain cancers, including breast cancer.

Upon arrival, you’ll be greeted with aprons, receive a walk through of the recipes for the class, and then get right down to it in our fully-outfitted kitchen. An expert chef with over four decades of experience will help you master techniques such as bhuna, dum, tadka and baghaar, essential to both classical and new Indian cuisine, and hacks that are key to getting knockout flavor. During and after class, you'll get to sample a variety of dishes, while enjoying lively conversation with your fellow students.
Over the course of these classes, you’ll produce stalwart Indian dishes (such as Bagaray Baingan, Biryani, Haleem, and Cholay) as well as experiment with new takes on beloved classics, using a wide range of ingredients, including eggplants, tomatoes, cauliflower, potatoes, okra, peas, beans, pumpkins, kale, spinach, carrots, lentils, cilantro, leeks, curry leaves, mint, mustard seeds, nigella sativa, turmeric, bell peppers, collard greens, pomegranate, tamarind, cabbage, beets, cardamom, cloves, cinnamon, cumin, coriander, garam masala, saffron, and fenugreek.

Need to know information and what to expect:
At the farm cooking school, there are no hard-to-find ingredients or strange cookware. Great cooking isn't about recipes—it's about the quality and nutrients of the ingredients and techniques. In our classes you'll work together with other students in a fun, hands-on environment led by our professional chef instructors.
Classes are 2 hours, unless otherwise noted above.
Hands-on classes are limited to 6 students
 You will be standing, cooking and working for most of the class
 Please wear comfortable, closed-toe shoes and have long hair tied back.
We will supply aprons and all cooking equipment/tools. However, if you prefer to use your own kitchen knife, you are welcome to bring it.
 You will enjoy a full sit-down meal at the end of class with your classmates 
 Please bring empty containers to take home leftovers
 Students receive a coupon good for 10% off at our spice shop on purchases the day of class.
 All recipes are developed using common cooking and baking ingredients that may or may not be specified in the menu titles, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc.  If you have a food allergy, please inform us at info@nirmalaskitchen before attending the class.
 Adjustments to recipes cannot be made during class.

What are my transport/parking options getting to the event?
If you are driving to the event, directions from the New York State Thruway (Interstate 87) are as follows:
Take Exit 18, New Paltz. Pass through the toll plaza to the traffic light. Turn right onto Route 299. Proceed through two traffic lights. At the second light by Lowe’s make a left, go one block to a stop sign, make a right.
We are less than a half-mile, look for white horse fence on the left. If you past the church you have gone too far.
 Bus and Train Travel
Bus service is available on Adirondack Trailways to the New Paltz. Service departs from Port Authority in NYC, Albany Trailways, Route 17 in Ridgewood, NJ and locations in southern New York and Long Island. Trailways can be reached at 800-858-8555 and online at http://www.trailwaysny.com. Bus is 80 minutes from NYC.
Train service is available via Metro North and Amtrak trains to the Poughkeepsie Train Station, approximately 15 minutes away from Highland.
